Why fresh matters

Olive oil loses up to 40% of its polyphenols within a year of harvest — and the bottle in your pantry is probably two years old. Fresh, high-phenolic oil is basically a different food: grassier, greener, with that peppery tickle in the throat. That tickle is the oleocanthal working. We ship it while it’s still there.

Is this a subscription?

No. This is a one-time preorder for the founding drop. No auto-renewal, no membership fee — if you love it, we'd love to have you in the club we're building next, but that's a separate decision, later.

When does it ship?

The oils are milled October–November 2026, then air-freighted and shipped to you in early December 2026. US addresses only for the founding drop.

Which oils will I get?

From the hunt list above. We finalize the lineup at pressing, when we've actually tasted the new oil — the trio is always three different oils. Every bottle arrives harvest-dated with its lab report.

What if I change my mind?

Full refund, no questions, any time before your box ships. And if the oil doesn't rearrange how you think about olive oil, we'll refund you after, too.

What if a harvest slips?

Weather happens. If an oil we're chasing doesn't come through, we substitute from the hunt list — and if we can't deliver something we'd proudly pour, we refund you in full instead of shipping it anyway.
