Why fresh matters
Olive oil loses up to 40% of its polyphenols within a year of harvest — and the bottle in your pantry is probably two years old. Fresh, high-phenolic oil is basically a different food: grassier, greener, with that peppery tickle in the throat. That tickle is the oleocanthal working. We ship it while it’s still there.

Weather happens. If an oil we're chasing doesn't come through, we substitute from the hunt list — and if we can't deliver something we'd proudly pour, we refund you in full instead of shipping it anyway.
